Lemon-Sage Sorbet

2 cups water
1 ½ cups sugar
1 egg white
¾ cup Meyer Lemon Juice (if using bottled juice add 1 Tbsp fresh lemon juice)
2 tsp Organic Lemon Zest
Fresh sage leaves
2 tsp Organic Sage
Boil water and sugar together over medium-high heat for one minute. Add 5 fresh sage leaves and the dried sage allowing mixture to steep for 2 hours. Strain mixture through fine sieve and discard solids. Beat egg white until frothy and slowly drizzle sage syrup into egg white. Add lemon zest. Mixture should be refrigerated for at least two hours or overnight. Process mixture in ice cream maker according to manufacturer’s instructions.

Garnish with fresh sage sprigs.
